Dette er en asiatisk salat med kalkun som jeg har skrevet av fra en Nigella-kokebok en gang. Kjempegod!

Bang bang turkey
Sauce:
2 teasps groundnut oil
3 tbsps smooth peanut butter
2 tbsp chinese chilli bean sauce
1 tbsps caster sugar
1 tbsp soy sauce
1 ½ tbsps chinese black vinegar
2 tbsps water
Heat groundnut oil in small saucepan and let it cool. Pour into a bowl, add remaining ingredients and stir or whisk to make a smooth, thickly runny paste.
Salad:
275 g cold shredded turkey
1 medium head iceberg lettuce, finely shredded
20 g/small bunch fresh coriander, chopped
20 g/small bunch fresh mint, chopped
125 g cucumber
1 spring onion
Arrange shredded lettuce over the base of a flat plate, then sprinkle coriander and mint over the top. Drip 4-5 tbsps of bang bang sauce into a small bowl , add 4 tbsps of shredded turkey strips, turning them into the sauce until well coated.
Arrange the peanutty turkey strips in a rough line down the middle of thesalad, and then just peel and dessed the cucumber and cut into fine strips. Halve the spring onion and finely slice that too in long strips, then sprinkle both over the turkey. Dribble over a tbsp or so more of sauce.
